Whole Food Chocolate Donut Snack Bites
Happy New Year friends! I got you a little gift: a healthy, EASY, whole food snack/treat that the whole fam will love. These little guys are kind of a cross between a Larabar and a chocolate truffle and a cake donut all mashed into one. They are made with 100% whole food ingredients (dates, oats, cashews, and cocoa) and taste just as delicious at snack time as they do for dessert.
This is a great recipe for little helping hands because they need to be shaped into bite sized pieces by hand. My babes enjoy squeezing the mixture together into “cough balls” (my sweet girl’s sort of gross interpretation of the word golf ball). All you have to do before the rolling commences is put the ingredients into a food processor and blend!
The chocolate is optional unless you’re me in which case it is absolutely not optional but necessary. I used a few chunks of a super dark chocolate bar someone gifted me this Christmas and it was perfect.
I’m always looking for portable, healthy snacks to pack in the diaper bag. I’m also always looking for delicious treats that I can enjoy alone while hiding in the pantry to avoid sharing. This recipe checks both of those boxes which makes it a winner in my book. Let me know what you think!
Makes about 12 golf ball sized bites
1 cup old fashioned rolled oats
1 cup whole dates, pits removed
1 cup cashews (walnuts, pecans, or almonds will also work)
1/4 cup cocoa powder
3 tablespoons coconut oil
1/2 teaspoon vanilla extract
1/2 cup dark chocolate, chopped (optional)
1. Combine all ingredients in food processor and pulse until a thick dough forms, about 5-7 minutes. Mixture may be crumbly depending on the dates used but should still come together into a ball when rolled.
2. Roll mixture into balls or press into an 8 x 8″ pan and cut into bars. Store in the refrigerator.
