This is one of my top 3 favorite go-to healthy meals for the whole family. I have a few recipes that remain among my favorites because they are healthy and easy to make. I found these a few years ago, and I swear that they get better each time I make them. The way they are cooked makes them so unbelievably tasty, and I love making them with the big red bell peppers. They are a bit sweeter, and they make the dinner so delicious.
Without further ado, here is the recipe!
PREP: 15 minutes COOK TIME: 35 minutes TOTAL TIME: 50 minutes
1 lb ground turkey
1 garlic clove, minced
¼ onion, minced
1 tbsp chopped fresh cilantro or parsley
1 tsp garlic powder
1 tsp cumin powder
Dash of salt
4 large, sweet red bell peppers
1 cup fat-free chicken broth
¼ cup tomato sauce
1 ½ cups cooked rice
¼ cup reduced-fat shredded cheddar cheese
Heat oven to 400°
Add some olive-oil spray to a medium sauté pan and place on medium heat
Add onion, garlic and cilantro to the pan
Sauté about 2 minutes, and then add ground turkey
Season with salt, garlic powder and cumin, and brown meat for several minutes until meat is completely cooked through
Add ¼ cup of tomato sauce and ½ cup of chicken broth, mix well and simmer on low for about 5 minutes
Combine cooked rice and meat.
Cut the bell peppers in half lengthwise, and remove all seeds
Place the peppers in a baking dish. Spoon the meat mixture into each pepper half, filling it with as much as you can
Place all stuffed pepper halves on the baking dish and pour the remainder of the chicken broth on the bottom of the pan
Cover tightly with aluminum foil and bake for about 35 minutes
Top with shredded cheddar cheese and enjoy.
I love that this recipe combines a meat, a carb and a vegetable all in one! It’s the perfect dinner when you don’t have a lot of time to spend in the kitchen. Plus, the cleanup is easy too! All you have to do is wipe down the pan and the baking dish. Easy peasy!
I will also usually make a larger batch of these so that I can eat them for the next one or two days. Being a busy mom, I don’t usually have the time to get to the grocery store more than once a week. I try to grab everything I will need in one trip, and then cook in for the rest of the week until I can make it back there.
