Quick & Easy Holiday Cookies

This post is written in collaboration with eBay. Thank you so much for supporting the brands that I love!

This week we had our monthly girls craft night and we did a cookie exchange too! I was scrambling for a quick & easy holiday cookies recipe and decided on these gorgeous classic thumbprint cookies and knowing how easy they were to make, I dove in! Peppermint kisses are one of my favorite candies during the holiday season so I knew I wanted to put those in the middle. This batch made about 34 cookies!

Quick & Easy Holiday Cookies

Whenever I do any baking, I always bring out my KitchenAid mixer because it’s great quality and mixes everything together so seemlessly! We received ours as a gift about 10 years ago. eBay has a TON of these for such a great price! You can pick out some gorgeous colors too, like this pop of red! eBay is a great place to scoop up your kitchen appliances for a great price and you can check out their selections here!  One of my favorite current deals is this amazing air fryer (excellent reviews). We just got one and it is LIFE changing! If you are looking for something specific on eBay, it’s super easy to search at the top of the page and then you can set our filters on the left!

I love baking with all my holiday baking accessories. I have a few different holiday towels and plates. I found some similar towels here & a cute Christmas plates here

Now onto the recipe for these delicious cookies!

  • 1 1/2 cups powdered sugar
  • 1 1/4 cups butter, room temp
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 cups flour (you can substitute almond flour if you’d like!)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 bags of unwrapped Candy Cane Kisses
  • 2 Ungreased cookie sheets
  • 1/3 cup of granulated sugar

Step 1. Preheat oven to 350°F.

Step 2. In a large bowl, combine the butter, powdered sugar, extracts and egg and beat well until creamy (2-3 minutes).

Step 3. In a separate bowl, combine baking powder, flour, and salt and whisk together.

Step 4. Add dry ingredients to the wet mixture and beat until well blended (1-2 minutes). At this point, the mixture should be a bit crumbly.

Step 5. Shape dough into 1-inch balls. Roll in granulated sugar, if desired; place on ungreased cookie sheet.

Step 6. Bake for 8 to 10 minutes or until set. While they are baking, remove wrappers from the kisses.

Step 7. Remove from oven and cool for 2 minutes. Press a candy cane kiss into center of each cookie; cookie will crack around edges.

Step 8. Remove from cookie sheet to wire rack. Cool completely. Store in a sealed container.
