Cozy Sweet Potato Mini Muffins

This DELICIOUS cozy sweet potato mini muffin is brought to you by one of my new blog contributors, Laura! Laura will be one of our DIY contributors and I am so excited to see what she has in store for us! Today’s post on how to make cozy sweet potato mini muffin is perfect for Christmas morning breakfast or a healthy snack during the cool winter months! My overall goal with my new contributor section is to bring you fresh, new content that you haven’t seen before. I love having a well-rounded blog that focuses on many different topics that might strike your attention! It has been a dream of mine to have contributors for a few years now and I truly believe that I have gathered up some of the best! I am beyond thrilled to have Laura on board with us and I hope you are too!

When Lynzy casually mentioned that I might be a good gal for sharing recipes with you through her (amazing) blog, I did the following things: squealed, called everyone I know, panicked, squealed, said YES, and squealed again. I’m so happy to be here and hope that you find my being here helpful!

Let’s switch subjects dramatically: I LOVE SWEET POTATOES. Everyone who knows me knows this. I buy them every single time I grocery shop. I literally cannot go into a store without buying at least one sweet potato JUST IN CASE I might be running low at home. Sweet potatoes were a first food for each of my babes and they make it onto our breakfast, lunch, and dinner menus at least a couple times a week. I would serenade them (I may have already serenaded them). Full of fiber, antioxidant rich, deliciously sweet and creamy, I use them in a lot of ways both sweet and savory (not going to lie though, topped with marshmallows is at the top of my list).

This year we tried something new on our little farm and GREW sweet potatoes. Turns out they are pretty low maintenance, although they require a lot of space. On the day we dug them up I couldn’t stop OMG-ing at how massive they were. The average tater was the size of a football, so now I have 30 football sized sweet potatoes to store somewhere. Better come up with some ways to use them!

These muffins are cute ‘n tiny, fluffy ‘n sweet, and 100% guaranteed to be approved by the people you love (even the tiny, sometimes picky people!). Oh, and you only need one bowl which ranks really high on my list of importance when making a recipe.

I hope you’ll give these a try and let us know how it goes!

Cozy Sweet Potato Mini Muffins

cozy spiced sweet potato muffins

1/2 cup mashed sweet potato

1/2 cup milk (any kind of milk will work: almond, coconut, dairy, etc.)

3 tablespoons oil (I typically use avocado, coconut, or flaxseed oil)

1/4 cup brown sugar

2 teaspoons apple cider vinegar

2 teaspoons pure vanilla extract

3/4 cup unbleached all purpose flour (you can also use whole wheat or oat flour, both result in less fluffy muffins)

1/2 teaspoon pumpkin pie spice (cinnamon, ginger, nutmeg, and allspice)

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

Heat oven to 350 degrees and Grease a 24 cup mini muffin tin (I like to use coconut oil spray).

In a large mixing bowl, combine mashed sweet potato, milk, oil, vanilla, brown sugar, and apple cider vinegar. Whisk until combined. Add in flour, baking powder, baking soda, salt, and pumpkin pie spice. Mix with a wooden spoon until just evenly mixed (trynot to overmix).

Pour batter into muffin tin, about 1 tablespoon per cup makes a perfect sized mini muffin. Bake for about 20 minutes, until a toothpick comes out clean.

Store in the fridge in a sealed container for a few days or freeze for up to three months.
