In case you missed it, last month I shared my Spinach, Mushroom & Onion Breakfast Frittata recipe. So many of you loved it because it requires minimal time in the kitchen, is easy to make and serves a bigger crowd. It’s really the perfect brunch recipe. But what about those mornings when you’re literally running out the door and only have 5 minutes (if that) to think about breakfast? I’ve got just the thing. This smoothie is the perfect breakfast for busy moms!
Made with antioxidant-rich berries, protein-packed yogurt and nutrient-dense leafy greens, this Banana Berry Breakfast Smoothie will keep you energized all morning. It’s a wonderful on-the-go breakfast or even a delicious post-workout snack, especially if you add a scoop of your favorite protein powder.
I must admit – before making this, I used to be a smoothie hater. I just didn’t believe that a drink could keep me full and satisfied for longer than half an hour. But after jumping on the smoothie train and trying it out for myself, I’ve become a convert. Smoothies rock!
- 1/2 cup raspberries, fresh or frozen
- 1/2 cup blueberries, fresh or frozen
- 1/2 cup plain Greek yogurt (or other type of plain or vanilla yogurt)
- 1 banana, peeled and frozen
- 2/3 cup almond milk (or other type of milk)
- 1 cup packed greens (I used a mix of spinach, kale and chard)
- Add all ingredients into blender and pulse on high until smooth.
- Serve and enjoy!
