Something about the colder weather rolling in that gets my Betty Crocker aspirations flowing again. Does anyone else go into a slump once spring & summer arrive like I do? For whatever reason, I completely ditch the kitchen and rely HEAVILY on the grill. Hots dogs and hamburgers it is! Something about fall and the creeping in of the holiday season that gets me back in the kitchen and dreaming up all the yummy recipes that I can create. I am partnering with Hero Fruit Spread to talk about how we spread goodness throughout the holiday season and a peek into this new recipe I recently tried out:  Chicken Sautee with HERO Red Currant

Hero Red Currant Chicken Sautee

The red currant is often used to accompany fish and meat dishes (something that I never knew)! The tart flavor of the red currant tends to balance meat and fish perfectly. Some people will also add it to their morning yogurt, adding a bit more flavor and texture! I tried this with some granola as well and it was delicious!

A chicken sauté recipe that is the perfect amount of sweet and sour. A recipe perfect for this fall & winter season.

Ingredients
  1. 1 lb boneless chicken breast: cut in strips
  2. 4 oz. Hero Red Currant Fruit Spread
  3. 2 tbsp. Balsamic Vinegar
  4. ½ tbsp. Virgin Olive Oil
  5. 1 tbsp. Brown Sugar
  6. 2 tbsp. WATER
  7. ½ tsp Garlic Powder
  8. 1/8 tsp Onion Powder
  9. 1 clove: finely minced garlic
  10. 1/8 tsp Black Pepper
Instructions
  1. Mix all ingredients (except chicken) in microwavable bowl.
  2. Microwave on HIGH for 15 seconds.
  3. Be sure sugar is melted.
  4. Stir together.
  5. On stove top, brown the chicken for 12 minutes.
  6. Stir in mixture and cook on low heat for 10-12 minutes.
  7. Serve with rice.

One of my favorite things about Olivia getting older is being able to involve her more in cooking, cleaning and other errands around the house and teaching her that these tasks can be fun. I also want to help her understand what it means to be able to spread goodness into the world. Every December I try to get her (and Ellie once she is big enough) to do at least one thing that helps to spread goodness to those around us. Whether its volunteering, making gifts for those less fortunate, donating clothes/toys that she picks out, etc. I want them to always understand that to make the world a better place, we need to think of others (always).

There are a few other Hero Fruit Spreads that I wanted to mention. HERO has such a wide variety. Among these, their raspberry continues to be their best seller and it’s slightly tart.
